Oatmeal chocolate chip cookies, yum

I am a baked-goods fanatic. However, while I enjoy baking 24 cookies, I do not need to eat 24 cookies. So, I brought my baker’s dozen to Pop Outerwear‘s office.

Here is a delicious recipe for oatmeal chocolate chip cookies. If you stop by the showroom, you might be offered one…

The Most Amazing Chocolate Chip Cookies:

In large bowl, beat egg until fluffy. If you are an indulgent/spontaneous baker such as myself, bring butter to room temperature by using the “defrost” setting on the microwave.  Beat butter, egg & vanilla together, blend in sugars. Warm butter = unhappy cookies

After the wet ingredients are mixed, put the bowl in the freezer to chill**

1 C Butter
2 Eggs
1 C Sugar
1 C Brown Sugar
1 t vanilla

Mixing

Now, mix the dry ingredients together in separate bowl. I just recently got a food processor for my birthday (thanks Mom!). If you have one, blending the oatmeal makes a nice consistency. But for the past 4 years, I have successfully baked these cookies without. This also adds another step/dish to wash…

2 C Flour
2 1/2 C Oatmeal
1 t Baking Powder
1 t Baking Soda
1/2 t Salt

Ready for the oven

Slowly blend in dry ingredients. Fold in chocolate chips. Bake at 375 for 7-10 minutes. If you have a wretched oven, such as mine, rotate cookie tray and reduce temperature 25 degrees, if needed.

** again, an unnecessary step, but it helps give control of the cookie shape.
